Keurig alkmost killed my love of coffee, French press never impressed me, the Bialetti made me look forward to the pleasure of a perfect brew.

Also, don’t let it steep as long as many people say. That will reduce the bitterness.

Reading this thread, this seems to be my problem. It frankly never occurred to me to time my coffee, but I will try it out

Like someone else pointed out already, if you are using some stale, pre-ground, over-roasted coffee, then the French press actually works against you. You really need some fresh, light to medium roast, single-sourced beans to appreciate what it does. In BR, you can often find Cafeciteaux beans roasted within with a day or two, I highly recommend them. There are some other decent options as well, depending on where you shop.

Along with using a coarser grind to down on solids, I also skim the grinds that have risen to the top before pressing, and it makes a pretty clean, robust cup. Not quite a clean as a pour-over, but more flavorful with a better mouthfeel.

Having a good burr grinder and goose-neck kettle and pretty essential as well.

I absolutely love the taste of coffee from a french press. But, for me, it's far too strong. Like I literally feel like I'm having heart palpitations after a single cup. Had a Cuisinart grind-n-brew and it never treated me the way a french press does.
