Crawfish Ettouffee Cooking Time After the Tails are In

How long? No more than five minutes for me, as the sauce has already been built. Don't care to cook the tails down to damn near nothing. You?

Way too many recipes are cooking tails, which are already cooked, 20, 30 minutes or more. The size of the tails will shrink 2x...not good at all.

I only cook crawfish after they have been peeled from a boil.....
So, sauce cooked..... Add tails and warm'em up - serve.

This and half the at best if your using left over tails from a boil..
This is why the fat is so important..
