Client gave me two geese, four ducks, and six packs of deer sausage

Going to smoke them for the game tomorrow. He gave me a good recipe for the geese and I'll just grill the deer sausage. Any suggestions for the ducks and what kinda cook time am I looking at?

We smoked some wood ducks last weekend at the camp. Seasone inside and out then stuffed em with onions, bell peppers, Jimmy Dean sausage, garlic and apples. Smoked for about 4 hrs on 225. Turned out good.


Might want to keep the geese for a gumbo. Unless they're speckle bellies. Even then they might turn out too dry in a smoker..

The geese are speckle bellies. Not sure what kind of ducks. I can find out. Your duck recipe sounds good.

On a side note, I had to double check my spelling of duck while typing on my iPhone. The I is awfully close to the u.

Or you could stuff w/ peppers, onions and rice and do some smoked duck fajitas....

Check the Recipe Thread. I've got a pot roasted duck recipe that works great for specks, and there is a duck n' greens recipe that works well, too. Smoking whole plucked ducks like Balls says is always good...just don't over do 'em.
