Getting from Newark Airport to Penn Station by train

Can someone walk me through the process? Is it difficult?

Super easy. Take the airtrain to Newark Airport station, go down escalators/elevators and get on train to NYP

It’s about as simple a process as it could be. Straight shot and costs about $16. There are signs everywhere directing you to the train.

As others have said, it's easy to navigate. Once at the tracks, you can take either NJ Transit line, whether it's NEC or NJCL. Both take you into Penn. Just make sure you're following the track number, but I'm pretty sure everything that goes into NY is on Track 1 and 2.
