It's a weird construction. China isn't an adjective. You'll note that it's not called "Spain Flu" (ignoring that said flu didn't actually originate in Spain). Calling it "The Chinese Virus" is silly political pandering, in my opinion, but at least it fits normal English grammar conventions. "China virus" sounds like something a toddler would say.

ETA: And they aren't called "France Fries".

Did the Spanish intentionally or accidentally release their version of the Flu from a lab? If not, how in the world is it political pandering to acknowledge where the virus originated?
