Fuel to transport is up. Feed is up. Wages are up at every point bc have to pay much more to attract people to actually work, as opposed to collecting Biden’s check.
Buy an entire calf. Found a farmer years ago. Started buying it and having it cut how I prefer. We keep the heart, liver , sweet breads, and bones. Usually pay about 8$-9$ per pound when all is said and done.

That's the catch. Everyone I've talked to trying to do that same is told that there's a 2-3 year waitlist.
I guess this problem has eased up some, but for a while, even if you paid for the cow directly. It was a 6-12 month wait for slaughtering.
If your farmer is butchering the cow himself, I'd keep that to yourself. Don't want the USDA coming after him for selling unlicensed, uninspected products.
