If you’re a coach, why would you rather USC over LSU? USC, while great, has really only had success lately with Pete Carroll. LSU has championships with Les Miles and Ed Orgeron. If they can win one, then any coach worth anything could do the same or better. And that’s playing in the SEC west, the toughest division in college football. And you can argue that winning a championship can’t save you from being fired for a few bad seasons. But in reality, the only reason Les Miles and probably Ed O are fired would be for pure incompetence and an unwillingness to adapt and adjust.

If you have no ties whatsoever to either state where would you and your family rather live? A ritzy part of the Los Angeles area or Baton Rouge?

While there is more competition for it, California has a much larger number of players due to sheer population than Louisiana. USC is probably the preeminent historical football power in California.

You and your family don't live in the fishbowl that is the SEC and Baton Rouge. The LSU HC is probably the biggest celebrity in the city and one of the biggest in the state. As such, you are under constant scrutiny from the people in your city/state. The USC HC is probably the 2,500th most recognized celebrity in the city. Thus, while there is still pressure, it isn't the daily fishbowl pressure that comes from being a SEC HC is a (relatively) small city.

The fan/booster expectations aren't crushing. While it probably wouldn't be the wrong decision to fire O if LSU has another bad season, doing so would mean LSU fired their HC only two years following literally the best season in the 100+ year history of the program. The demands to win in the SEC are unrivaled. At USC there will still be pressure and expectations. But because USC football isn't the biggest thing in the state the HC gets more job security.

Now, there are DEFINITELY a lot pros for the LSU job. But it is not clearly better than the USC job. It just depends on what things are most important to a particular coach.
