It has more to do with the size of the flakes and the composition of the salt for me.

Kosher salt crystals are larger and easier to pinch than iodized salt and most (not all) kosher salts are free of anticaking agents (Morton's contains yellow soda of prussiate).

Also, iodine was added to salt because many people around the world had iodine deficiencies and developed goiters as a result. Now, people get enough iodine in trace amounts from seafood, eggs, and the water supply, therefore it is unnecessary for most people to use iodized salt.

I will say that iodized salt is the best salt for French fries and most other fried foods as it has a remarkable ability to adhere to the exterior of the fried food product.
