Is it ridiculous to just plan on doing 10-14 day trips and do one country per trip?
England for 2 weeks then a year or 2 later do Germany, then Italy, then France, etc.

It really depends on how you like to travel but that is exactly how the wife and I travel to Europe. We might do a 2-3 side trip if we have friends in the area but our last few have been:
17 days in Ireland (not quite enough but damn near it)
11 days in England plus 3 days in Edinburgh
11 days in England plus 3 days in Normady
12 days in Scotland (need at least another week there)
12 days in Spain (need two more weeks there, maybe three)
Next trip is 14 days Azores/Portugal.
On the horizon, Italy, France, Belgium.
My first trip was a summer in school where we did 8 countries in 28 days. It was a blast but no desire to do that again.
