Chow Yum Phat is boiling their Vietnamese style crawfish today according to their Instagram. They’re different but very good.

I abhorred my experience with these. By far the smallest straightest tall bland expensive crawfish. Half the cost must have went into the garlic because I reeked for days. Southerns viet bugs are otherworldly. CYP just can’t do it correctly and they boil in clean water so the potatoes are bland af and those quail eggs are not a great add to the flavors.

The ones I had last spring were great, they must have changed something. Good to know. Southerns are solid, had them last time they came to Tin Roof.
