The fall meet opens Friday the 8th so yes there will be races that evening. The last races are around five or six if I remember correctly. You could make a couple races if you get into Louisville at 130 but you'll have to go straight to keeneland from the airport. Also opening weekend is a hot ticket under normal circumstances. The spring meet that's running now is reduced capacity. I could see that being a hard ticket to get so maybe look into securing tickets ahead of time even if back to 100% capacity.

I haven't been to Churchill or seen the museum there, but I don't think you'll have time to do both. Personally I would rather see live racing at a nicer venue but that's me.

For a bourbon tour I really like woodford for the setting but then again I live in woodford county so I'm biased. Buffalo trace is cool for the sheer magnitude of their operation. Their hardhat tour is supposed to be awesome but it needs to be booked way in advance. Wild turkey has a nice scenic overlook, but it's nothing to write home about. Makers is cool but a little out of the way. The bardstown stuff might be a little out of your way.
