I just went there for a bachelor party last year. Alot of the big distilleries weren't open for tours at the time. Some had only thier gift shops open so we just decided to stay within the city limits. Keeneland wasn't open to the public at the time either. Below are some of things we did that I would recommend.

Red Mile - since Keeneland wasn't open we went watch the races here. It's harness racing so it's a different experience than Keeneland. They have all the races on and you can bet on all the races there.

Bluegrass Distillery tour and West Sixth Street brewing - we did a distillery tour here. It's small but the tour was informative and the 4 bourbons were good. West Sixth Brewing is in the same building so we walked over after the tour and drank some beer and order some small plates.

Distillery District - They have a couple distilleries, bars and restaurants here. It's a pretty cool little place and we spent half a day here.

We stayed downtown so we tried out several bars within walking distance of the hotel and had a great time at all of them. We also seemed to end up at McCarthy Irish bar at the end of each night since it was across the street from the hotel and always packed.
