I'm sorry but I refuse to believe someone is doing 40-50% of the work other than the chef on to go orders.

And that’s how I know you’ve never worked in a restaurant. Most restaurants have a line of cooks in the back - each working on a different item. The head chef typically handles the meat. That’s a matter of pulling it out of the cooler, seasoning it, and putting it on the grill or in the oven and monitoring the cooking process. Not much else. Everything else is done by someone else.

For to-go orders, someone is taking that food out of the window, putting it in the proper container, making side salads, gathering condiments and sauces (to include pouring them into a separate container if necessary), verifying every item of the order is correct and present, bagging that order, and handling the customer’s payout and any additional requests. All of that can be very time consuming.
