Thanks all for your tips, really helpful! I know the area got hit bad and figure that we should throw our vacation money at an area that could use the support (even though a lot still shut down from covid/storms).

check out Seafood Palace. It is a older, well known restaurant that just opened back up and they definitely could use the patronage (get there early like 430-5pm because the locals will be there in force this). TaD's is a newer Cajun restaurant in town with quality food and good management. If you want some Creole food although its mostly BBQ check out Famous BBQ. They might have not opened up the main restaurant but their Sandwich spot right next door is selling their Boudin and cracklins. Try the soft and spicy cracklins as they are a very unique item.
Some kid friendly places that have outdoor activities are Rikenjacks and Crying Eagle Brewery.
Although the nature trails and most outdoor activities are not accessible in Cameron Parish you can always grab a daiquiri to-go and take a drive. There are plenty of migrating birds and alligators that you will be able to spot. Maybe drive down to Rutherford beach. Like one of the other posters mentioned "crabbing" the ditches along Rutherford beach road are perfect for that. You might not catch much but the experience of strait lining crabs is a must.
I want to Say that the Creole Nature Trail Adventure Point is open. This is in Sulphur (Carlyss area) on the side of town that will lead to Rutherford Beach Etc....
