Quoting the dictionary definition of gender after Dictionary.com already caved and altered their definition to fit with the narrative that these people were pushing.

This. Gender is a grammatical term. Gender does not equal sex. There are two sexes.

That's the crux of it all. Some people make this a semantic argument, while others will debate the science. There are many anthropologic studies that detail how gender has a cross-cultural spectrum. Some societies recognize a "third" gender.

The science is settled that there are rare cases of intersex genotypes. Additionally, the medical literature has long been clear that "trans" and "non-binary" individuals experience varying forms of gender dysphoria. Typically these people also are diagnosed with a wide range of psychiatric issues likely as a result of the dysphoria.

Furthermore, there is very little evidence that going along with gender dysphoria through hormone treatments and surgery will have long-lasting positive outcomes on mental health. Some studies even suggest that chances of suicide will increase after surgical procedures.

So, yes we can recognize that some people may not naturally conform to various gender norms of a given culture. However, I can't imagine why policy makers feel the need for everyone to bend over backwards to change wording and go out of their way to ask people their pronouns.
