Just watch the entire series and understand it falls off at the end. It's worth an entire watch thru

This, big time. If you're gonna sit down and watch it, watch it as it was intended to be watched. Start with S1 and watch through the end, and don't skip episodes.
And even though it dips in quality pretty heavily in the last season or two, there are still some great moments in it and it's ultimately still a fun ride. As long as you don't get all fanboy about it, you should enjoy it just fine. Overall, it's pretty awesome television.

I don't know about watching the first two twice, but the map is a good idea. Also printing something out early on that shows the relationships between families and people (if you're watching the DVDs, it's an insert in S1) can be pretty helpful. It can definitely get confusing at times trying to keep everyone straight, especially if you've never read the books.
My main piece of advice: Use subtitles. It helps tremendously.
