They actually taste really good. I killed one last month. Thing was huge. Prolly 45 lbs. I skinned it out and plan on tanning the hide at some point. I kept the skull for a European mount. Cooked on of the hind quarters like a pot roast. It was delicious.

i've cooked beaver before and it is really good. best part was after when i told ms. mack and the other couples with us that they can say they ate beaver and liked it.
