I just looked it up. It’s a significant issue apparently. Mexican bologna is prohibited in the US because it is made from pork and there is a fear it could introduce foreign diseases into our food chain.
Seems to me there’s an opportunity for someone to make “Mexican bologna” in the US using the original recipe with US-sourced ingredients.
