a lot of my choices (Mario 64, Goldeneye, etc) have already been mentioned, so I'll go a different route.
I was blown away my World Series Baseball '95 on SEGA. Never before had I played a game with legit logos, real stadiums, the ability to trade (I think?)...and I thought the graphics at the time (specifically the pitchers and the batter) and the ability to pick and locate real pitches. I was absolutely lost in this game the first summer that I had it.
