Building new PC for my Sim Racing rig, should I hold out for Ryzen 9 5900X?

I'm working on a new sim rig for my sim racing hobby. Decided to give it a dedicated PC instead of being tied to my desktop PC.
I currently have a Gigabyte RTX 3080, and started the process of looking at CPU options. I know the Ryzen 9 5900X are pretty hard to come by these days, so wondering if I should just stick with a 3950X and call it a day. The rig will be powering a Samsung Odyssey+ VR headset and a 49" Ultrawide 144hz/240hz 1440p monitor. I've got a pretty open ended budget, but wondering if I'd regret going with the 3950X just for timeline purposes.

Sim racing is out of my wheelhouse. Which game, in particular, do you play? Might help in finding someone who has done a boutique cpu benchmark.

I play Assetto Corsa and iRacing mostly. I race exclusively on my VR headset at the moment and get 75-80 FPS on my 90hz VR headset. I'm currently running a Ryzen 7 1700 and GTX 1080.
I'm adding a ultrawide so I can start playing the F1 games since they don't support VR. I'd also like to eventually get back into Flight Simulator, but that's not a current priority.
My current rig runs the games fine, mostly just looking to upgrade proof the system for a few years until there's a game that really demands more out of it.

Certainly in VR, and probably at 1440p, I have to think your cpu just isn't going to matter a ton.
I don't know this guy from Adam, so I'm certainly not vouching for his methodology, but in his tests, he found functionally no difference between the 5600x and the 5900x in Assetto Corsa, which makes me think that any gains you'll get will be more from the architecture changes in Zen 3 allow for faster IPC than anything else: LINK
If it were me, I would probably lean Zen 3, but I'm just not sure if a 5900x will actually give you any boost over a 5600x for your usage case. If you don't really care much about the money, the 5800x isn't a great value proposition, but because of that, it has by far the easiest availability, and would kind of split the difference between the two.

Personally I'm waiting for the Ryzen 9 5900X to go with a RTX 3080. I don't remember the specifics of the research I did except that they were paired together pretty well. There are plenty of indexers/videos out there which would probably answer your question.

I like you was originally holding out for the 5900x to pair with my 3080 but got tired of waiting and went with the 5800x. So far no regrets on my end. You won’t see a big difference in gaming.
