Thanks. Guess I’ve been missing out all these years of my life. I honestly can’t remember seeing any crawfish in gumbo that I’ve been served. Probably because I’ve either eaten chicken and sausage gumbo or seafood gumbo. I’ve had fish in my gumbo which sort of made me think it was like adding crab far as texture is concerned.
