I’m buying local farm eggs and recycling my egg cartons back to the farmer every few weeks. I’m not so busy or so amazingly well compensated that 10 minutes once a week to mix a crustless quiche is going to put a dent in my income. Cook once, breakfast all week. Seems efficient to me.

Too, I loathe excess non biodegradable packaging, and egg bites definitely tick that box.
