Just remeber if you put tile or anything on the wall behind the toilet the new toilet won't fit unless you get one with a different offset. Adding anything to the back wall will change the rough plumbing of the toilet flange.
Toto makes toilets with adjustable toilet flanges but they are expensive. I have one and had to have the piece special ordered which took over a month.
Also my idiot father in law bough the wrong toilet and the back of the toilet wasn't close enought to the back wall. The doofus sat down and leaned against the tank and it caused a leak between the tank and the bowl.
Adding ship lap or tile to bathroom walls isn't as easy as you think.

i didnt know this was a thing but i checked around my house and every toliet is at least 3/4 - 1" away from the wall. i dont think 1/4" thick shiplap or even thinner beadboard would affect this too much.
