I think any vacation with their family is awesome for a 2 yr old. I wouldn't overthink it too much.
We just took our 3 year old to Grand Tetons and Yellowstone and he loved it. He got to run free outside, kayaked, swam, saw some bears, bisons, dear, fox, etc. and eat a ton of smores and snacks.
