i noticed that nobody else mentioned the mogollon rim or white mountains, and was going to recommend it.

and then i thought, there are enough people from the valley and tucson ruining those places, no need to send out of towners too :-P

but seriously OP, there are some incredible hikes, streams, creeks, and lakes atop the rim and along fr300 and below the rim. and a big loop of 260, 273, and up 191 in the white mountains will put you in some incredible country.
