We once stayed at the Omni in Asheville. Absolutely loved it. It's quite pricey to stay in the original hotel. The add-on sections are essentially Holiday Inn rooms. Resort rooms with a mountain view are a must. A mountain view suite is preferable. Another nice stay is The Inn at Biltmore. I actually enjoyed our stay at the Inn more than the Omni, as the swimming pool, walking grounds, rooms, and service were better.
The great thing with staying at the Inn is you get access to the Biltmore grounds included in your stay. And at any time, you can head north to the Omni and catch an evening meal or just sit out back to watch that majestic sunset. Or if it's coolish or cold, sit in that amazing lobby, rocking all the while. It is one of the great American hotel lobbies. All at no charge. The secret is do the parking yourself. You get two hours free as long as you park in the lot that's to the right just before the lobby entrance, slightly on the hill.
You won't go wrong with either the Omni or the Inn, but again, I prefer the Inn. And you have free access to the Omni as well. If you find that the Omni might be more your style (you like gingerbread contests and guys in tartan sweaters), you can always do the Omni on your next visit.

I agreed with your reviews of the two most famous Asheville Hotels, however I felt compelled to clarify a statement you made with regard to the Grove Park Inn.
To wit
I’ve been to this contest several times and let me share an image that captures the essence of the event-
A good time can be had by all ages there.
I actually do prefer staying at the Biltmore but either venue is acceptable.
