Differences in Cheese Quality

My local grocer had a special on Boars Head cheeses so I got some provolone. I’ve only ever eaten provolone of the Sargento type quality. Holy hell! So much better. It’s got a super funky smell and strong taste. Huge difference.
Any other cheeses worth the premium to buy Boars Head etc versus generic?
ETA: I usuallly don’t eat cow milk derived cheese and try to stick with raw full fat goats milk cheeses. I’ll take goat cheese suggestions as well.

If you can get unpasteurized cheese, it will open you to a world of cheese you never knew possible. I spent a few months in Europe over the years. Coming home I experienced quality cheese withdrawals. There is not a single American produced cheese I have tried that compares to the good European cheeses. Next time you visit Paris, you must try Androuet. Any cheese there is phenomenal. The smell alone when you enter will knock off your socks! Best yet, more than just purveyors, they are also affineurs.

This or go to a place like this someday and prepare to be amazed.
Those are all authentic Pecorino cheeses in Greve, Italy. Butcher shop established in 1729.
