I feel like this is a question that says more about us than the actual actors/actresses.

Doesn’t this boil down to “who do we still like after their good looks fade?”

Just saying that we ain’t gonna find a lotta of “Steve Buscemi’s” & “Jack Nicholson’s” in this thread despite their great careers at early and later stages of life

Brian Dennehey. Although his look never changed, his character roles (bad guy/good guy) always morphed as needed. RIP.

There certainly is some truth in that. When I made my OP, I was watching "The Untouchables" with Sean Connery in his Oscar winning role and this is the same guy that was the handsome, dashing 007 now killing it in middle age graying and bald.

We see a lot of actors/actress start out white hot and fizzle while some break through with age and their looks changing and i I found it an interesting topic.

I think some actors try to hold on to the fountain of youth too long and not accept taking roles age appropriate and end up screwing their looks up worse with cosmetic surgery like Jennifer Grey did with her career-killing nose job.

Granted, A lot of actors age and generally look the same just older and have great careers for decades like Harrison Ford and Kevin Bacon.
