There is no such thing as a dead period at Disney anymore. In the times that used to be dead, Disney schedules events that bring people (dance and cheerleading competitions, sporting events, specials for foreign countries who are on vacation right now, etc). That’s why the parks are always crowded. Every now and then you’ll luck up and hit the park on an in between day and it’ll be relatively empty, but those are few and far between.

I try to go at the least busy times of year (but like you said that really doesn't exist anymore) but if you get there for park opening and leave right after lunch and head back to the resort or something, then go back mid afternoon you can usually beat the crowds a good bit.
