But wasn’t Couchon’s thing to sell “high end” rice and gravy and other dishes that people in the Acadiana area cook themselves at home all the time?? I seem to remember something like that. Such a model at the price points they had in Lafayette was never going to work.

You nailed it. In Lafayette every gas station has boudin, hog head cheese, etc

Yep. Pretty much. They also had a few eclectic offerings but it was mostly Cajun staples that were sold at a premium. (Needed to cover the expensive river front real estate in river ranch)

I brought that up in the context of BR restaurants being able to make it in Lafayette. If they are executed properly, they definitely can.

I think the Chimes will do very well
