New York Style Bagels from scratch

Someone i recently stumbled upon on YouTube is Joshua Weissman. A younger guy who creates a ton of content/recipes. Was in the mood for a good bagel and noticed he had a really simple recipe for NY style bagels. Couldnt have gone any easier and they turned out great!
How To Make New York Style Bagels
Ingredients you'll need:
500g bread flour (about 3.5 cups)
23g white sugar (about 1.5 tablespoons)
10g instant dried yeast (about 1 tablespoon)
297g warm water @90 degrees Fahrenheit (about 320 ml)
6g salt (1.5 teaspoons)
I used Trader Joe's Everything Bagel seasoning
Combine the yeast & sugar together with 320mL of 90* water. Stir then allow to sit for 10 minutes. The yeast should plump up. Stir once more.
Add yeast mixture to 500g of bread flour and 6g of salt. The dough should be pretty rough looking prior to kneading. Knead for 10-20 minutes. Aim for smooth exterior. Put the ball of dough in a greased bowl and cover with damp towel for 1 hour or until doubled in size.
Split your dough in half, then the halves in fourths to make 8 bagels. Bring a pot of water to a gentle boil and boil/poached each side of bagel for roughly 1-2 minutes. The longer the more chewy the bagel will be.
Add your bagels to a greased baking sheet and season. Bake at 425* for ~20 minutes until golden brown. Voila!

Is washing my face with the icy cold tap water, that comes out ice cold even in the Summer. New York City does have good tap water.
