hat's how I'm starting to feel about my Japanese Yard Long beans on one of my trellises. I've probably picked about 2000 of them since they started coming in and I've got all I need canned or in the freezer and most of my neighbors are not wanting any more of them.
those things were awesome for a couple weeks, then I got overwhelmed by them too

They are great grilled like asparagus, cooked down like any other type green bean, but don't pickle worth a damn is my experience. I've got quite a few quart jars of them simply blanched and used a pressure cooker to process them for later use.
When I tried pickling them I would cut them in lengths to fit a quart jar, pack them in as tight as I could, make my brine and after bringing it to a boil, I'd pour it over the beans then put the jars in a hot water bath for 20 minutes. Then remove the jars to cool and seal.
I found the beans got very leathery and not like regular bush or pole beans when pickled.
