I just assume anyone with tats like that doesn't have good hygiene. Would never let a medical professional touch me or chef touch my food that looked like her.

You might as well quit going (or never start going) to fine dining restaurants you will find more tats now in most Michelin starred restaurants than a US Navy ship during WWII. It is very much a skin art culture today.
