I’m sure you tried it but if you can, lift the deers upper body as high as you can onto the rear wheel well of the four wheeler. Hop onto the rack and pull him up the rest of the way, using the wheel well as a slide.
That’s my best Tip. I’ve loaded some brutes that way.

Another option I've never tried would be to keep a good rope and pulley with you, and find a big tree branch to hoist him up. Then drive the 4 wheeler under.
