Lots of good advice in here. I will throw out there:
- Seeing the Christmas Spectacular w/ the Rockettes. That will put you in the Christmas spirit if nothing else will.
- Maybe take a carriage ride through Central Park
- Go to the top of the Empire State Building
- Go to Grand Central Station (great oyster house there)
Tough thing about NYC is that it is so big with so much stuff that you could probably take ever recommendation on here and have a blast, but you won't have the time.
