Here is how I make mine

5 lbs potatoes peeled and cubed
1 dozen eggs
Yellow mustard
Mayo

Boil potatoes till soft I like to add some seasoning and maybe some celery/ onion to the water.

Drain potatoes and set aside

Take boiled eggs and separate white from yolk.

Chop egg whites

Smash yolks in a bowl and put a healthy squirt of mustard

Dump this mixture into boiled potatoes and mash along with the egg whites

Put enough mayo to get desired taste/consistency

I have never measured the mayo/mustard ratio just eyeball it and taste as I go.

Some people like a chunky potatoe salad I prefer a mashed. I will also add some chopped green onion from time to time but not everyone likes the crunch.
