looks like a great trip and thanks for taking the time to post photos.
last year my wife and I took a last minute trip to Bourbon country as well (stayed in Lexington). it's impossible to see some of the bigger distilleries with a last minute trip though (like you mentioned with Beam). We got lucky and managed to get a tour at Buffalo Trace, Bartons 1792, and Heaven Hill, but struck out at Woodford Reserve (which was my number 1 choice).
