My wife and I make "burrito bowls" every week with chicken breasts.
We make a rub of salt, pepper, chile-lime seasoning (from Trader Joes), cumin, cayenne pepper, smoked paprika, onion powder, garlic powder. Rub the chicken with the seasoning mix and bake at 425 for 10 minutes on each side.
Once the chicken is done, we slice it up and put it over quinoa (rice works too), beans (black or pinto), fajita veggies, pico de gallo, sour cream, and cilantro.
Makes for a delicious weekday meal that's fairly healthy.
