I enjoyed Jagerhaus in New Orleans, but apparently they closed down (quite telling)...
But if I could get exactly what I wanted, I'd love a place with a large variety of Pilsners, Hefeweizens, and Bocks served in the appropriate glasses, with an interior that looks something like what's pictured below. Yeah, I know it's gimmicky...kind of like a Bavarian version of the Londoner. I'd like that.
For food, the basic saurkraut and bratwurst will do in addition to mustards, pumpernickel, pretzels, pastries, and cake.
We just don't have the right kind of population for it. See the midwest, and parts of Texas can pull it off.
