Just curious, but how many of your entry level workers were druggies, too? That seems to be par for the course up here for restaurant servers. That's all they can get to take those jobs.

Most of them were, some probably still are.
I have a 2nd chance philosophy.
Most of my guys were at one time in prison, or have a drug/assault/DUI rap sheet.
We've turned around quite a few guys and I'm very proud of that, but if I had to start them at 15.00/hr, I would probably pass.
