serious question how did these people survive in the past... gluten filled world?

Many of them died, it happened back then also. I have a family member who does our family history stuff and has a big book written. I had some long ago cousin or uncle in early 1900s that was some kind of shrimp or crab fisherman. He had a story of a guy dying his first day after touching either crab or shrimp, I can’t remember which, it was also my relatives first day and he nearly said frick all that. Guy had “red bumps” and “big tongue” and fell over and went blue were his words iirc. That would be from anaphylaxis

Eta: Also my great grandmother was a teacher in rural north La back in the 30s era. Not many kids had any peanut butter but the allergies to it were at least known about back then in the schools. It just wasn’t actually called peanut allergies back then or at least in her circle
