It's a combination of a lot of work, not a lot of people who want to work, and people wanting to pay as cheaply as possible.
For a full time construction guy, it's not worth it to take some people off of a huge job / long term contract, simply to do your small job.
Plumbing, I know this is a big issue. The number of guys who will actually come out to your house and fix a plumbing issue keeps getting smaller and smaller. You either have the roto-rooter types which are ripoffs, or you have a lot of guys who only do construction work.

But the Roto-Rooter and John Moore types actually show up. So if you don't have "a guy" you may be stuck with these companies to get it done and done on time.
