I'm not sure I'd differentiate rock and classic rock.

Soul--Marvin Gaye.
Rap--I love Dre, but he's a producer. I'd go 2Pac because he's spawned so many imitators.

You’re right about Dre not having enough as an artist to qualify. Although, 2Pac gets WAY more credit than he deserves. A Tribe Calked Quest or Run DMC would probably be more ideal.

Even though he stared in Motown, I’ve always thought of classic Marvin Gaye as definitive R&B.

The king of soul is likely Sam Cooke, but Otis Redding is right behind him.
