I actually agree with a lot of the premise of what youre saying , which i take as , Emmitt isnt as great as hes lauded to be.
He was still great and id take him every time. He wasnt the flashiest guy, wasnt the most talented. He wasnt gonna win a footrace or amaze you with his athletic ability. What he was gonna do is take the ball as many times as you needed him to and use his special innate abilities as a runner. With toughness, vision, balance and running downhill better than anyone else in his era. Take him every time.
Sanders was the greatest of the generation and in my opinion there shouldnt even be a discussion. He was a virtual opposite of everything i just admired about Emmitt, aside from lacking top end speed. The guy has/had the record for most yards lost in a career while, according to pace, racking up the greatest level of yardage gained in history. He was amazing. Under the definition of "breaking ankles" should be a picture of Barry Sanders.

Emmit not the greatest
Joe Montana not the greatest
Tom Brady not the greatest either.

Jerry Rice was great because he was fast and had skills right. The first 3 didn't look athletic and dont fit the bill. Or they did not jump off the screen at you when you see them play.

I guess they just happened to be 3 of the greatest players of all time. But who am I
