Disneyland Time Needed

I made a post a few months ago but wanted to ask a couple more questions. We are headed to Disneyland for Mardi Gras. We will fly in early Saturday morning and could hopefully hit the park by noon. We'll hit the parks again on Sunday and Monday. We will also have park hopper. We'll have a 6 year old and a a 2 year old with us. Should we plan another day on Tuesday or will we have had plenty of time to do everything there is to offer. We will like to take in shows and things like that. The Food & Wine Festival will also be going on at the California Adventure Park.

2.5 days is enough time to do both parks. Split them up so you aren't in either the whole day. split the early hours if you have them. Stay late at alternating parks so you can see the fireworks and parade at Disneyland and then the Water show and Ca Adventure. Monday should be much less crowded. You'll do a lot then.

Just came back from there a couple of weeks ago. We spent 3.5 days there and you should have plenty of time with the 2.5 you are spending there. Be aware that the castle is closed and behind construction walls/scrim right now. I assume with children that young that it will probably limit you from doing some of the bigger attractions (Space Mountain, Indiana Jones, etc).
Like another poster said, since DL has tons of locals going there weekends are going to be more crowded. We were there from Tuesday-Friday and Friday was easily the most crowded day. Also check the weather before you go cause it was damn cold while we were there. I really enjoyed the new nighttime projection show they are doing on Main Street and the facade of Small World, so I'd suggest checking that out. They do it twice a night.

We did 3 days at DL and it was plenty. The FP system is much different than at WDW. Pay the $10 to get access on your phone.
