I am interested in a full set too. That’s what started me looking at that set for so cheep. I just don’t want to use my kitchen knives like I just did. A good skinning gut knife seems Is key I can do most of it with 1. But it has to stay sharp or be easily made so.
I’m trying to get to were I’ll just process myself. Grinder and sausage stuffer and so on.

If you want a minimalist approach, get a knife with a gut hook, if you're looking for a kit, keep the gut hook separate from the skinning knife.
Outdoor Edge Swing Blade, may be something to look into, there's even RazorPro that offers the changeable razor blade with the gut knife
