Cook them with a starch like rice. I do "girth rice" where I cook a couple of giant handfuls of spinach along with carrots, peas, green beans, etc in rice - just throw it right in the rice cooker with your rice and bump your liquid ratio up by about 1/2 cup compared to where you normally would cook rice. I then use this to make teriyaki rice bowls, rice dressing bowls, or stir fry and it has plenty of micronutrients cooked in. Also use this for breakfast sometimes to make cheesy eggs with fried girth rice.
