Sea Island on St. Simons in Georgia checks a lot of your boxes. Really great golf, secluded/private, upscale. St. Simons itself is also very nice and there are plenty of resorts (King and Prince) that will be cheaper than Sea island.
In the South Carolina area I prefer Litchfield and Hilton Head.
Beaches in the hamptons are generally shite but the towns themselves are extremely nice. Montauk has a couple resorts with good beaches.
