I did'n go higher than 25 gallons on the JC because I wanted to be able to fit it all on a letter sized page. Also, I figured anyone cooking a pot that large would already know what they're doing on big pots.
ETA: If you're only doing an 80% fill, you are only making 24 gallons of jambalaya. Why not use the numbers for a 24 gallon pot at 100% fill level? That should work.

I can get the answer on the app for 80% of 30 gallons. Not sure if that's proprietary info though.
