Cinder blocks in a rectangle about 3 ft high. Make a hole high on one end of the rectangle, and a hole on the ground on the other end. Put the pig in the middle of the rectangle about 2 or 3 inches off the ground, place on top of a grate or sheet of stainless. Cover the whole rectangle with a sheet of tin and lay banana tree leaves on top to seal up any gaps. Place coals on the side of the rectangle in or near the lower hole. Smoke and heat will rise over the pig and exit the high hole on the other end. Put a meat thermometer into the thigh of the pig. Pull it off when temp hits 180F. check multiple spots for temp. Brine/marinade overnight. Enjoy.
